What are some of the penalties if I decide to sell cars without a bond and my state does require one?

Operating without a required bond
You would need to check with your state's requirements to find out exactly what the penalties would be - they are probably going to be severe as you are operating a business without the state's requirements which is considered fraudulent.

It wasn't intentional, would it be possible to purchase a bond and back date it to cover the last two months?

Back Dating a bond
Generally a surety will only back date a bond no more than 30 days
